When the new year comes around, it’s natural to want to clean up your diet and eat a little bit healthier. Even if you eat relatively healthy, you may not feel particularly inspired with meal prep + planning, so sometimes you can get stuck in a rut and find yourself eating the same things over and over. We want to experiment a bit more in the kitchen, though, so we've been looking for simple, healthy dishes that you can easily make on those days when you're ballin' on a budget, or just ready to make something new.
